These can occasionally be really dry (though I haven’t tried this exact recipe) - if you make this and it seems a bit dry, play with the ratios a little bit. I’m assuming it’s a microwave/kitchen thing, ‘cause I’ve made the exact same recipe in different machines/houses and gotten completely different results (and mug cakes seem to be especially prone to it).

Just made one and it worked! My tips: use something other than olive oil, as the taste was a bit overwhelming (unless you like olivey brownies). Also, a dash rather than a pinch of salt.  Dashes are smaller, right?

Next time, I’ll probably use Splenda instead of sugar. And chuck in some chocolate chips.
